Ideas? Tomato Paste

Wow! I've been bad about posting here. Life has been busy and I've been distracted with spoiling my new niece. While my sister in law is on maternity leave, my schedule is different and I'm working at the office more. After Christmas, things will return to "normal". (Ha! If there is such a thing.)

While you are waiting on more recipes, does any one have ideas for using up tomato paste?

Pizza? Thin it down with broth, it makes rich tomato soup.

Really, you can use it like any tomato product--just add more water.

Minestrone....A fall standby.... All you need is some pasta, beans (kidney or pinto are best), frozen vegetables (green beans and carrots are favorites), a little broth and tomato paste. Super yummy.

QOC-Do you happen to have any recipes for pizza/spaghetti sauce? I would like to try making my own, but don't have a good recipe.

I make it differently every time depending on what I have. I always use one can of beans and at least two different vegetables. You can taste as you go and judge if you need to add more broth by the consistency. I would use italian seasoning or just some basil, oregano, and thyme. Garlic salt/powder is good too. I don't guess at many recipes but minestrone is an easy one.
