Anyone want to give me some good crock pot recipes? Vegetarian or chicken? I just pulled out my old crock pot from college and made beans in it, but I am facing a lack of creativity in the kitchen. Maybe because no one has posted on here in over a month. HELP!

I love crockpots! That way if I run out of steam or the baby has a crisis at 5:30, we still get dinner.
Almost any casserole you can cook in the oven or stovetop will work in a crockpot. I made chicken tetrazinni on Monday. If the ingredients are already cooked, I'd give it no more than 2-3 hours on low.
This is my favorite way to fix black beans in the crockpot:
1 lb dry black beans
1 1/2 or so quarts of water.
Soak overnight, drain and cover with water again in the morning, then cook on high all day.
About half an hour before dinner, saute 1 medium onion, chopped, 1 green pepper, chopped, and 2 cloves of garlic in 2 T. olive oil.
Add to beans with 1/4 c. red wine vinegar, 2 T. honey, and 3/4 t. cumin and 1/2 T. salt, or to taste.
Serve with rice.
